“Life With Chocolate” Muffins
Ever begin the day with a fine
mocha cappuccino (made with
Hot Fudge Heaven) and want something alongside it? Look
no further. These small banana cakes have fresh fruit, oats,
and an amazing chocolate crumb on top.
Beat 1/2 cup butter and 3/4 cup light brown sugar until
blended. Add 2 large eggs, 1/4 cup milk, 1 cup mashed ripe
bananas, 1 1/2 cup flour, 1 tablespoon baking powder, 1/3 cup
old fashioned oats. Spoon into 12 greased muffin cups.
In separate bowl mix chocolate crumble with a fork until
mixture looks like peas:
2 tablespoons chilled butter, 1 tablespoon Hot Fudge Heaven,
1/4 cup flour, 1/4 cup sugar, 1 tablespoon oats, 1 tablespoon
baking cocoa.
Bake 15-20 minutes @375°.
For freshly baked muffins any day: line the muffin cups with
foil, fill with batter, freeze, remove and seal in a plastic freezer
bag. Allow the frozen batter a few extra minutes bake time
and they’re always ready for your daily fare!
